Spanish Classics: Paella

Overview:

Celebrate the beautiful colors of the Arboretum in early October! As the leaves reach their peak, so do the flavors and colors of a Spanish-inspired feast in the Myers Kitchen. Join Chef Beth Fisher for an evening of classic Spanish cooking, crisp autumn air and the warm, inviting flavors of paella.

In this hands-on experience, you’ll prep seasonal vegetables, gather around the grill to make tomato garlic bread, and watch Chef Beth bring a traditional paella to life. Discover the techniques behind perfectly cooked rice and the coveted sucarrat, then sip sangria and gather around the table for a Spanish-inspired feast. You’ll leave with your own paella pan, ingredients and recipes to bring the flavors of Spain home — plus a little of the chutzpah of a matador.

In this partial participation class you will:

• Discover how to make a fresh take on traditional gazpacho using ripe, flavorful harvest tomatoes.
• Learn some new ways to cut veggies and the art to achieving the sacred sucarrat – the golden, crispy layer of rice considered the crown jewel of an authentic paella.
• Sip and stir sangria like a pro! Learn techniques for crafting bold, refreshing, fruit-forward sangrias.
• Take home your Spanish starter kit – a paella pan, the vegetables you’ve prepped in class, bomba rice, smoked paprika and printed recipes for home.

• Fall Harvest Tomato Gazpacho
• Paella Loaded with Vegetables, Chorizo, Chicken and Shrimp
• Grilled Tomato Garlic Bread
• Sparkling Sangria (Non alcoholic beverage available)

Chef Beth Fisher is thrilled to bring her experience to a new role as Culinary Manager at The University of Minnesota Landscape Arboretum. Known for her years of teaching at various cooking schools and creative culinary work at several popular Twin Cities restaurants, Beth is now focused on enhancing the Arboretum's fast growing culinary offerings and kitchen classroom educational experiences.
